Procedure

1. Disperse xanthan gum in water with moderate mixing. Mix until completely hydrated.
2. Heat to 65 – 70°C and add remaining phase A ingredients.
3. In a separate vessel, combine phase B ingredients and heat to 60 – 65°C.
4. Once both phases are at temperature, slowly add phase B to phase A.
5. Homogenize and cool to 45°C.
6. Add remaining ingredients.
